Cucumber and mint salad


















Cucumber has just started to turn up in my veg box, strongly and sweetly flavoured. It's delicious with mint from the garden roughly chopped, a good squeeze of lemon juice, and a tiny drizzle of oil. Mmm

Thanks for kind words Marigold. Oh Jane, the pressure, the pressure ;) Katie my mint is going haywire too, lots of tea required, as it's coming up in places where we haven't seen mint for two or three years

What a lovely idea, I have masses of mint too - must buy a cucumber and make this salad. Maybe when it is a tad warmer??
