Very quick, very delicious chocolate pudding

Fabulous Easter pud - make it with the best chocolate you can find. I make it with Willie Harcourt-Cooze's Peruvian or Venezuelan, but anything darkly delicious will do. It's (more or less) his recipe, too - they come on the inside of the wrappers.

I've got one sitting in the fridge for dinner tonight. I may make another for lunch tomorrow ... it's the work of moments, only you'd never guess.

Tartuffo
for 8-12 (it's v rich)

180g cacao, grated
300ml double cream
150g icing sugar

Melt the chocolate. Whip the double cream to soft peaks, add the sugar. Let the chocolate cool a little, then beat it into the cream. Pour this mixture into a mould lined with cling film - this is enough for a small loaf tin. Chill.

Perfect! I wanted to make two puds this evening for a kitchen supper with friends. This will be one of them. I make something similar with a mix of milk and dark chocolate but omit the icing sugar.

Interesting that you use Willie Harcourt-Cooze's cacao, I was thinking of buying some but was put off by the £6 price tag. Do you think it's worth the money?

Every halfpenny, Sam ..... here, chocolate is a special treat, always very dark, and Willie HC's is the best of the best - which is why it's pricey and only for once in a while :)

PS thinking about it, there are different notes in it, rather as if you were tasting a good wine, if that doesn't sound too silly ... I'm writing this the morning after the night before, and it was the star of the show, even though introduced without fanfare. It was just that everyone HAD to know about the chocolate

Well, that recipe is a must, especially as Willie HC's Devon factory is very near here indeed. No excuse really. Sounds as if you had a truly delicious Easter.
